This is a Jura speciality sweet wine made by the inimitably talented Jean Francois Ganevat, in a 37.5 cl bottle.
A cuvée produced only in the best vintages, a blend of Chardonnay and Savagnin from vines planted on several plots of land, with predominantly clay-limestone soils. The grapes are harvested by hand using small crates. The bunches are then laid out to concentrate, followed by a long pressing, fermentation and long maturation in old barrels, without any topping up of the barrels. Cloudy appearance.
Powerful and complex aromas with notes of roasted apricot, orange peel, acacia honey, hazelnut, and quince. A wine with a great deal of residual sugar, but balanced by just the right amount of acidity. A wholsome, rare Vin de Paille that is all rich, elegant and smooth. Ready to drink now yet with excellent ageing potential.
