An impressive, rare white wine with maximum yearly output under 1000 bottles. Made from the Begleri variety that is cultivated only in the tiny, volcanic island of Icaria; The spontaneous fermentation takes place in multiple, small 6-litre clay pots, buried in the ground in the traditional Icarian way. The fermentation progresses all the way naturally from start to finish at ambient temperatures over 4-6 weeks. The aromas and palate are rich in pear, melon and stone fruit flavours with savoury overtones. Full and substantial, alongside a velvet textural coating, thanks to its clay vessel maturation.
We recommend serving chilled but not very cold, ideally around 12-14c (30-40 minutes in the fridge). Opens up beautifully over the course of 60-90 minutes from opening.
