Manual harvesting, total destemming, fermentation and maceration in 2400 litre barrels. Punching down and pumping over once a day for 3 weeks. One month of maceration followed by long, gentle pressing and ageing in the same barrel.
Dark morello cherry and small tannins emerge from the attack, the material is enveloping, wide and deep. Beautiful aromatic complexity that will gain even more over time. Crunchy and very enjoyable.
