"Natural Cava" Penedes, Spain

This lovely sparkling ancestral natural white wine is grown and made in Penedes at the heart of the Cava growing region. As an ancestral natural wine it cannot be called Cava even though it is made from two of the traditional local varieties: Xarel-lo and Parellada. It is an excellent aperitif to start an evening with or a light mid-week refreshment (11.5% Alcohol). Smooth with good acidity and crispy bubbles (If you like your bubbles more subtle you can open the bottle and keep it in the fridge 10-20 before drinking. the bubbles will turn smaller and softer)

Mas Candi is a project of Ramon Jané along with his friend Toni carbo, an excellent winemaker in his own right. Located in Penedes, where they are looking to cultivate local, typical varieties and restore near extinct ones. The goal is to create pure, natural wine that expresses their terroir and local bio-diversity. Ramon's wines are known and loved around the world. Production remains fairly limited albeit the high demand.
