Nicolas Vauthier was among the first to promote natural wines in France. He was the creator of Aux Crieurs de Vin, a wine bar in the centre of Troyes, which he managed for more than 10 years. At a certain point in his life, wine became such a strong appeal that he decided to leave the management of the bar and dedicate himself to production. So he founded Vini Viti Vinci located in Avallon, in the north of Burgundy, very close to Chablis. Nicolas follows all stages of cultivation with extreme care; grapes come only from vineyards grown according to the biodynamic farming that is located on the grounds of the municipalities of Chitry, Irancy Épineuil, and takes care of the harvest and the vinification. All with the least possible intervention. Gamay based red wines, Pinot Noir and Cesare are vinified in whole bunches while the whites, Chardonnay and Sauvignon, ferment in wooden barrels. Its first harvest was in 2009 and his wines soon became the cornerstones of the appellation. Nicolas makes wines that are sincere, nervous, sweet and crispy: moments of pure pleasure.
