INFO ON GROWER
Located in the outskirts of Burgundy, a small village called Treigny in the south western part of the Yonne department (half way between Chablis and Sancerre), domaine Delhomme is owned and ran by Baptiste who comes from a famous grower-Champagne family. 6.5 Hectares that is managed through strict organic standards stemming from true respect of the land. 200-300 Meters above sea level, red varieties: Pinot Noir, Gamay, resistant Hybrid. White varieties: Chardonnay, Aligoté, Melon de Bourgogne, Sacy (local variety), Savagnin (a jura variety) and Viognier. Meticulous standard of vinification which continues the frame of work from the vineyards – nothing added, nothing removed yet with great attention to detail. The grapes are hand-picked, rigorously sorted upon entering the cellar, carefully destemmed, (reds macerate on the skins for 20-25 days) pressed manually with a basket press and get “raised” in old oak barrels (to avoid oaky notes that overshadow the expression of the fruit). Released after 4-8 months in the bottle.
