Half Aligoté and half Melon de Bourgogne were jointly pressed and macerated for approximately 24 hours, creating a fun, dry white wine. The talent inherent to the Burgundy terroir this wine comes from and that of the winemaker, Benoit Killian, are both on display, highlighting utmost purity and meticulously clean palate. Gentle notes of floral citrus and white fruit, controlled acidity on the mid-palate. Excellent pairing with raw oysters but also fried seafood and salads. Serve chilled and open 5-15 minutes before serving. 1,200 bottles made, a handful has been kindly allocated to us by Benoit (who is also a brilliant musician!)
