Tim Phillips, the winemaker behind Charlie Herring wines, cultivates his grapes inside a walled vineyard that was built in Victorian Times. This unique setting increases the temperature inside the vineyard which produces a riper and richer wines. It shows just how high a high quality wines can be made in the UK. This Riesling spent 4 years of maceration on lees, similar to champagnes, which gives it an interesting depth of flavour. It has incredible structure and is recommended to be drunk over 2-3 days. Simply replace a normal wine cork or a bottle stopper and put in the fridge. Tim suggests decanting it if drank at once. This wine is made at very small quantites and may not always be available.
