In the glass, an alluring translucent bronze colour, well-integrated tannins, joyous acidity and long aftertaste. Aromas of honeycomb, orange peel, and intense minerality. Serve chilled but not very cold (30-45 minutes in the fridge)

The vineyards are certified organic and biodynamic, adhering to Demeter standards. Panagiotis focuses on indigenous Greek grape varieties, including the rare white grape Santameriana and the red grape Mavrodafni, which he vinifies into dry wines.
In the cellar, Sant'Or employs natural winemaking techniques. The Roditis Amphora, for instance, is a skin-contact wine fermented and aged in 200-year-old local reclaimed amphorae. The fermentation is spontaneous, using wild yeasts, and the wine undergoes a 22-day maceration without pressing, followed by six months of maturation in large clay amphorae buried outdoors.
