The Pinotage, syrah (Shiraz) and the Mourvedre were all carefully selected before only the best parcels and best grapes were put in the tank to ferment separately. Spontaneous fermentation with the indigenous yeast started within 24 hours of picking and lasted for between ten and fifteen days. Blending was carefully managed before guiding the natural wine to French oak barrels to age for eight months prior to bottling.
Medium structure with very soft tannins, fruity and dry. We would recommend this wine with sausages (Your next barbecue?) or cheese platters. Can be served lightly chilled.
