The wines of Domaine Pechigo in Carcassonne (within the Limoux appellation) are elusive, rare and mysterious, much the like the winemaker himself. Sylvain prefers to avoid the limelight as much as possible and devotes himself to his land and vineyards; for him, strong organic and biodynamic work is by far the most important part in making good wine. This 2014 Carignan (with 5% Grenache) is vinified in semi-carbonic maceration to create an ultra-fruity, explosive wine that will take centre stage with its mouthwatering acidity. Its a bit of an elusive creature, though. allow it some time to evolve and develop and it turns from a "juicy-fruity" to a complex wine, full of character and depth.
