A crunchy red Pet Nat wine that is packed full of bright red fruit with a fine acid line. Made from 100% Triomphe d’Alsace, the grapes were handpicked and the whole bunches sealed in a stainless steel vat for 5 days. Following this initial carbonic maceration, the bunches were gently pressed, and the resulting juice left to spontaneously ferment for a further 8 days. The wine was then bottled via gravity, with a small amount of natural sugar remaining, and left to complete fermentation. Cold stabilisation occurred naturally over the winter months and the wine was hand disgorged to remove the heaviest deposits.
The Triomphe comes from a small plot of 35-year-old vines grown on clay over chalk in the Test Valley, Hampshire. A relaxed, lutte raisonée management approach is adopted and the vines grow with little human manipulation.
No added sulphites and no fining or filtration. 10.4% abv. 398 bottles made."
