This natural wine is showing the true expression of mainland Assyrtiko, through a spontaneous fermentation plus no addition of sulfites. The A-Grafo Assyrtiko has Lemon, bergamot peels, yellow apple and nectarine flesh with a hint of match flint. Full body, high acidity and long, lingering finish. Food pairing - Okra, grilled large fish, roast pork, lamb casseroles and anything cooked in egg-lemon sauce (avgolemono). The Vinification of A-Grafo Assyrtiko is partial (30%) whole cluster (with stems) / carbonic maceration with re-introduction of whole berries (20%) during fermentation.
