"Pif Is Not Dead" is a natural wine that really lets out the personality of Michel Alban, the winemaker behind Sabots d'Helene; a mad genius. The label pays homage to a 70's French magazine called Pif Gadget and to the winery's general winemaking style, nothing added - nothing removed. The wine is wild, reductive notes on the nose and a fresh, juicy palate full of dark and red fruit such as plums, blackberries and strawberries with strong earthy and peasant notes supplemented with a pleasant spiciness.
Tiny bubbles on opening will dissipate some time after opening, or before opening, you can gently turn the bottle upside down 3-4 times to release the excess carbon. We recommend serving slightly chilled (14c - 16c)
