This wine started its journey destined to be a Vin Jaune, Jura's famous oxidative wine. Made entirely with Savagnin it planted on grey, black and blue marl soils. Harvested by hand, the first year with topping up the barrels then six years of sous voile ageing in the cellar. During regular tasting, however, the wine appears more like a very good Savagnin ouille than a vin jaune, therefore the decision was made to bottle it in June 2022 with the Arbois Pupillin appellation. Treat this wine as an oxidative wine with great freshness. Serve chilled but not very cold (20-30 minutes in the fridge)
